meatless monday snacks
Meatless Mondays are going so well! I love cooking already so this challenge is really right up my alley. I usually choose a meat and then build a meal around that protein so I feel I'm being pushed to be more creative in my cooking! Above are some snacks I made during the past two Meatless Mondays. On the left there's brie, bread (Avenue Bread!), crackers and red pepper cashew dip and on the right I made bruschetta with some pea shoots that I got from the Bellingham Farmers Market. I am very happy with this veggie positive diet, so much so that this week I did Meatless Monday, Tuesday, and Wednesday.
